Published by: Nigel Way

Summer is just around the corner…

Why not try this simple recipe for elderflower cordial. It’s summer in a glass and so easy to make! Enjoy on its own as a refreshing summer drink or why not add it to gin and tonic or a chilled glass of Prosecco for perfect summer cocktails.

Ingredients •          650g sugar
•          1 litre boiling water
•          3 lemons
•          20 elderflower heads – foraged from British hedgerows from May-June or bought via your local      green grocers or farm shop.
•          30g citric acid (available from pharmacies)

Method

Carefully shake the elderflowers to remove any insects  – don’t rinse them, as it will strip the pollen and flavour. Place the sugar into a saucepan, pour in the boiling water and stir until the sugar dissolves. Grate the rind, then slice the lemons and add to the pot. Add the citric acid and the elderflowers and stir. Steep for 24–48 hours, then strain through a muslin into sterilised bottles. The cordial is ready to drink straight away and will keep in the fridge for up to 6 weeks. Alternatively, freeze it in plastic containers or ice cube trays and defrost as needed. Dilute with water (still or sparkling depending upon your taste) to create the perfect summer drink.
